Ingredients:

  • High On Chicken Barbecue Sauce
  • 1 kg of chicken breast
  • 500 grams of chicken liver
  • 2-3 buns
  • 45-gram salt
  • 19-gram garlic powder
  • 10-gram onion powder
  • 12-gram black pepper
  • 15-gram paprika
  • 15-gram mustard
  • 5-gram dried parsley
  • 70-gram milk powder

Directions:

Step 1:

  • Chop the chicken breast into small chunks of pieces.
  • In a large bowl, add the chicken breast and chicken liver.
  • Then add salt and black pepper to it and massage it well all over the chicken.
  • Let them rest for half an hour or one hour.

Step 2:

  • Take a mixing bowl and add milk powder which acts as a binding agent, salt, black pepper, paprika powder, onion powder, garlic powder, mustard powder, and dried parsley.
  • Now stir it so that all the spices mix up.
  • Add these seasonings to the chicken bowl.
  • Rub the seasoning throughout the chicken breast and liver evenly.
  • Add ice cubes to the bowl so that the sausages are not dry in texture.

Step 3:

  • Take a sausage grinder and put the marinated chicken into the machine a small portion at a time.
  • Place a large bowl below the grinder so the ground chicken is poured into it.
  • When you have finished grinding the chicken, pour it into a larger container.
  • Knead the chicken very well.

Step 4:

  • Take sausage stuffer to stuff the ground chicken meat into the sausage casing.
  • If you don’t have a sausage stuffing machine, you can make the sausage-like structure and fry it in a pan.
  • Let’s prepare the casing first. Soak natural casings in clear, warm water for at least an hour. This should increase the casing’s pliability.
  • The meat grinder’s funnel should be connected to the sausage stuffer tube. The sausage stuffer’s nozzle should receive one end of the casing. Check to make sure the casing is not twisted.
  • The sausage stuffer should be turned on. To begin with, go at a low speed.
  • When roughly 2 inches of casing are left hanging, securely knot the opposite end.

Step 5:

  • Cook onion in butter over low-medium heat until it becomes soft.
  • Bring celery, ketchup, water, sugar, vinegar, High On Chicken Barbecue Sauce, and mustard to a boil.
  • Simmer for 30 minutes with the heat down and the lid on until it reduces to half.

Step 6:

  • Place the hot dogs in a 2-1/2 qt. Baking dish after making three 1/4-in. Deep incisions on each side.
  • The hot dogs should be covered in sauce. Bake covered at 350° C for 40–45 minutes or until heated all through.
  • Take a bun, cut it into halves, and add the hot dogs, some thinly sliced onions, and any veggie you like.
  • Then add some ketchup and mustard sauce.
  • Serve the barbeque chicken hot dogs with some fries.
